About Me

I understand what you’re feeling! Next to my family, food is what I love most. But my relationship to food had turned sour. I felt crappy after I ate, lacked energy and hope, and felt anxiety around mealtime.

After going down so many roads hoping to feel better I was at a dead end. Special diets, supplements, allergy tests, blood work, doctors, homeopaths, functional medicine, you name it, I tried it.

But then I turned to the power of plants and now I feel Iike the parallel-universe version of myself: I have energy, I feel great after eating and I have hope for the future. The best part? I loved food again! My meals were more delicious than ever.

With this newfound excitement for what plants can do for us all I went back to school and studied with Dr. T Collin Campbell (the father of the plant-based diet) and became certified in Plant-Based Nutrition. I help my clients transition safely to plant-based or plant-rich eating with a clear map filled with delicious recipes.

You will easily save over $87 on your first two weeks of groceries compared to what you normally purchase. Studies show that plant-based grocery bills are 1/3 less than the current Western diet with high amount of meat and dairy.

  • We believe in a plant-rich life, regardless of your philosophy on animal products. We are not trying to convert you to veganism. We want you to increase your intake of plants because 1. It’s DECLICIOUS, 2. It is better for the earth, and 3. It will make your body feel energized and happy. While our course is fully plant-based, it is meant to be only a transitional strategy, after which you can decide to remain fully plant-based, or embrace the idea of a plant-rich life, and let animal products supplement your plant intake.

  • You will definitely get enough protein from these recipes. Did you you know that the average American has over 2 times the amount of recommended protein daily? Excess protein does not equal better health. These recipes are designed to give you the required amount of protein per day, and if there are specific protein sources you don’t like, there are easy substitutions including some animal sources if desired.

  • A very basic understanding of cooking will be helpful; however, the recipes are created for any cooking level. I studied cooking in Florence, Italy and I am certified as a plant-based nutrition expert from Cornell. I know exactly how to show you what to cook, and how to do it. The recipes are simple and easy to understand. And each recipe can be cooked in 30 minutes or less.

  • The recipes are designed with the working person in mind. With a little planning, you can execute this meal plan with minimal disruption to your life. Also, it’s designed to utilize leftovers in interesting and delicious ways. Some meals only take 5 minutes to prep. Some require longer. But you can pop in your favorite mystery podcast, and get chopping! It’s worth it, I promise!
